This is available as a 600g boule; it is made with natural leaven only, and contains a mix of 75% organic white, and 25% wholemeal flours. It is an established favourite, containing a winning combination of sunflower, sesame and pumpkin seeds which have all been roasted in tamari soy sauce. The use of a soaker of golden linseeds helps to ensure the loaf has reasonable shelf life, keeping the crumb reasonably open, and moist.

Sourdough likely originated in Ancient Egyptian times around 1500 BC and was likely the first form of leavening available to bakers. Sourdough remained the usual form of leavening down into the European Middle Ages until being replaced by barm from the beer brewing process, and then later purpose-cultured yeast.
